INGREDIENTS

CRAB-STUFFED SALMON

  • 3 salmon fillets (1/2 lb. each)

  • 1 cup cooked rice 

  • 1 cup crab meat (imitation crab can be used)

  • 1 tbsp. cream cheese 

  • 1 egg

  • 1 tsp. garlic powder

  • 1-2 tsp. olive oil

  • 1 tsp. fresh dill

  • Salt and pepper to taste 

DIRECTIONS

  1. Light your Pit Barrel® according to instructionsh .

  2. Slice the middle of the salmon filet open as a cavity so that it can be stuffed. Mix all ingredients for stuffing, except the fresh dill, in a large bowl.

  3. Fill the cavity in the salmon fillet with stuffing.

  4. Place stuffed salmon on a sheet of tin foil with a drizzle of olive oil. Wrap the tin foil sides upward so the salmon doesn’t slide off.

  5. Place salmon on the hinged grill grate for 15 mins or until internal temperature of the salmon is around 145 degrees. No need to flip. Drizzle fresh dill on top when done.
