Take your standard burger to the next level Chef "Ace" edition. With this recipe you'll pack all the juicy goodness between a bun.

INGREDIENTS

  • 1 duck (5 to 6 pounds), thawed for 2 to 3 days in the refrigerator if frozen

  • 1 tsp sesame oil

FOR THE RUB

  • 1 tbsp sugar

  • 1 tsp salt

  • 1 tsp ground black pepper

  • 1/2 tsp five-spice powder

  • 1/2 tsp ground coriander

  • 1/4 tsp ground cinnamon

FOR THE SMOKING MIXTURE

  • 2 cups cherry wood chips

  • 1/2 cup white rice

  • 1/2 cup black tea

  • 1/2 cup brown sugar

  • 3 cinnamon sticks

  • 3 star anises

  • 3 strips orange peel

DIRECTIONS

  1. 1 ½ lbs ground chuck, 6 ounce patties

  2. 3 large garlic cloves, minced

  3. 2-3 tbsp (or to taste) All-Purpose Pit Rub, or your favorite seasoning blend

  4. 2 tbsp Worcestershire sauce

  5. 2 tsp hickory liquid smoke

  6. 4 slices cherry-smoked bacon, cooked

  7. 2 slices or 1 oz provolone cheese, or use your favorite cheese

  8. ½ cup red onion, sliced and lightly sautéed

  9. ½ cup Portabella mushrooms, sliced and lightly sautéed

  10. 2 Kaiser rolls, or you favorite hamburger bun

  11. Note: Serve your burger on a kaiser roll with your favorite fixings.
    Suggested: Mayo, mustard, spring mix, roma tomato slices, and pickle spears.
